Padišpanja

Padišpanja, padešpanj, turta, are the names of this traditional Dalmatian cake. It comes from a variation of the Spanish cake (Pan di Spagna). The peculiarity of this recipe is that it deviates from some culinary laws (we add the mixture to the egg whites, bake without prior greasing of the dish, put it in a cold oven, cool it in a pan turned upside down). This variation of the recipe is a regional delicacy of the island of Pag, and the recipe is preserved by nuns.
