Pancerote

I got this recipe and have made it a hundred times since. If you like drinks and various types of dough, you will surely like it. The measure is quite large, but it can be halved and they are great the next day.

Preparation steps

  • Put fresh yeast with a little milk and sugar to soak. Then knead the dough with flour, salt, sugar, yeast, oil, milk and water. It takes as much flour as it can handle to make the dough look like muffins. Leave the dough to soak for 1 hour and 15 minutes. Then divide the dough into about 20 balls, depending on how many pancakes we want. Divide each ball into as thin circles as possible with a rolling pin.
  • Then each should be filled with a filling of ketchup, chopped ham, a little sliced mushrooms, grated cheese and oregano and / or basil. The filling can be changed according to the wishes and taste of the family. The mushroom doesn't need much because they go fresh and release too much water during baking. I put about 250g.
  • Fold each pancetta and squeeze well with either a fork or your fingers so that the filling does not leak out. Coat them with egg and sprinkle with sesame seeds, then bake them in a preheated oven at 200 degrees for about 20 minutes.
