Preparation steps
- Beat the egg well with the grated orange peel, a little salt and sugar, add the milk and mineral water, and gradually add the flour to make the mixture thick enough. Bake 8 thin pancakes on a hot greased pan.
- Fold the baked pancakes into a triangle. In further preparation, you can make 4 pancakes (2 portions) at once!
- Boil the wine with orange juice, cloves, vanilla and cinnamon.
- Melt 2 tablespoons of butter in a pan, enough for 2 servings. Melt 4 tablespoons of crystal sugar on it to get the color of light caramel.
- Place 4 folded pancakes on melted sugar. Bake for just a few seconds, then turn them over with a spatula so that the caramel is on both sides.
- Pour half of the cognac or brandy over the caramelized pancakes immediately and shake by tilting the pan slightly towards the flame of the gas hob to ignite the cognac. If you do not have a gas stove, light the cognac with a kitchen lighter.
- As soon as the flambé flame goes out, pour in half of the mulled wine and simmer over high heat to reduce the liquid faster. The sauce should be like liquid caramel.
