I remember that my mother-in-law made these cakes, not so often. Her neighbor, across the street, went to a pastry school so she was the "main" when the weddings were made. I think she taught my mother-in-law too how are these cakes made, and I'm sorry that the recipe wasn't written down, so I made it only from memory. I think that the dough is the same or similar to the Pozunski rolls test
Preparation steps
- Sift the flour into a large bowl, finely chop the butter and fat and put the bowl in the fridge to cool. Separate the egg whites and yolks and add the milk, vanilla extract, crushed yeast and grated rind of half a lemon and half an orange. Mix everything until the yeast do not dissolve. Take the cooled flour out of the fridge, add powdered sugar and a little salt and rub the flour, butter and fat until you get a loose flour. Add milk mixed with egg yolk and yeast, then knead a smooth dough. If the dough is a little drier, add a spoon. Divide the dough into four noodles and let it cool for about half an hour.
- While the dough is cooling, cook the poppy seed filling. Put water, raisins, sugar, half a lemon peel and half an orange peel on the fire (one half is put in the dough). When the water boils and the sugar dissolves, remove from the heat. and mix the poppy seeds and pretzels from the ground biscuit into the boiling water. Mix the filling well and set aside to cool.
- Take the cooled dough out of the fridge and divide each noodle again into four parts so that you get a total of 16 balls. Roll out each ball in the shape of a rectangle about 12 cm long and about 4-5 cm wide. spoons, transfer the edges from the side about half a cm. and then transfer the longer part of the dough over the filling to half and also transfer the opposite side of the dough over the filling so that the edges of the dough overlap only slightly. Form a roller, roll it lightly on the work surface making sure of the same thickness. Place the obtained roller in a baking tray lined with baking paper, making sure that the line where both edges meet is at the bottom. Repeat the same with the rest of the balls. Coat each roller with egg yolk, leave for 15 minutes to dry the egg yolks , again leave the rolls at room temperature to dry the egg yolks, then coat them with egg white. Leave the rolls for another 15 minutes to dry the egg whites and then put them to bake for about 20 minutes at 170C .Cool the baked pancakes and then serve them.
