Orejas de carnaval / Spanish carnival fries
Beautiful Spanish fries with orange juice and lemon zest. You will love them at the first bite, crispy on the outside soft in the middle, as a fruit of love between fritters and crostuli. I fry in deep oil but masquerades are always an occasion for that, and then diet hehee
Preparation steps
- Dissolve the salt in warm water / without it, the salt will only be on certain parts of the dough / Mix the flour with the baking powder. Put an egg in a bowl and add sugar, lightly make it to combine, add orange juice, dissolved salt, egg and brandy or rum, mix everything together well. Gradually add one tablespoon at a time, mixing the flour until you get a fine smooth dough. Place the dough on a work table that you have floured a little with the density / do not use flour because the flour will burn extra when fried in oil for such cases it is better to use the density /. Continue to mix until the dough becomes completely smooth. Wrap the dough in cling film and leave rest / 30min at least and the best would be 1h time /
- Cut the dough into walnut-sized pieces. Take each ball and roll it out. Make sure to lightly flour everything. Roll out all the balls and place them on a clean kitchen cloth lightly sprinkled with the dough. When you're done, heat the oil in a shallow pan. be enough for you.
- Put one piece at a time, squeeze the frit in the side with a wooden spoon until it is still soft. Add another, repeat the process, turn the fries until they become crispy and get a nice shiny color. Take them out with a pink spoon on kitchen paper and let them drain finely. Arrange them on a serving oval and sprinkle with ground or plain sugar from a mole of cinnamon.
