Orange, walnut and cardamom cake
There are several recipes for this juicy, delicious orange, walnut and chocolate cake, and this is mine with small modifications, with the addition of cardamom and turmeric and chocolate ganache icing. It is very fragrant and fragrant and for all those who love the combination of chocolate and orange a real treat.
Preparation steps
- BISCUITS: Separate the egg yolks and egg whites. Beat half the amount of sugar with the egg yolks. Grate the peel of two oranges and then squeeze the juice. Gradually add ground walnuts, steamed chocolate, milk, cardamom and turmeric to the egg yolk mixture, then lightly mix in the egg whites that we made with the remaining half of the sugar. Pour the mixture into a cake pan (I used a diameter of 26 cm) and put in the oven at 170 degrees, about 25, 30 minutes (it is important that the biscuit is not toasted as it will be dry). Pour orange juice over the hot biscuit and leave to cool.
- GANACHE CREAM: Put the cooking cream on a low heat and as soon as it starts to boil, remove from the heat and stir in the shredded chocolate and cardamom. Stir until all the chocolate has melted and pour over the cooled biscuit. Put to cool best overnight.
Serving
I sprinkled the cooled cake with turmeric powder and ground walnuts and served with orange feta, it was very juicy and refreshing.
