Orange Curd Cheesecake
Quite a simple, unbaked, refreshing boot in combination with the exquisite orange curd of a special frog;)
Preparation steps
- For starters, you need orange curd from this recipe (or one of your choice), so make it first (maybe a day or two earlier). Mix the biscuits with the melted butter and dab on the bottom of the mold with a diameter of 18 cm. Refrigerate while you prepare the cream cheese.
- Soak the gelatin with 5 tablespoons of water and let it swell. During this time, mix the cheese briefly (if you use fresh cheese, mix a little longer to get as smooth a structure as possible). Add orange curd, orange extract and powdered sugar to the cheese and mix again briefly.
- Heat the swollen gelatin over a low heat (just until it melts, making sure it doesn’t boil), then mix into the cheese mixture. Pour the mixture over the biscuit base and return to the refrigerator to cool and set, for a few hours or overnight. Sprinkle with a couple of tablespoons of orange curd before serving.
