Orange cookies (fasting)
I also like to make and eat cookies, so this recipe with orange came at the right time.
Preparation steps
- Turn on the oven to preheat to 200 degrees. We wash the orange and grate the peel to get one tablespoon (I used the peel of the whole orange because I really like its taste in cakes). Let's put it aside. Squeeze the orange, enough to get 1/4 cup of juice (I used whole orange juice again: D). Let's put it aside.
- In a small bowl, mix the oil and sugar and leave a little to dissolve the sugar. Meanwhile, mix flour, ground almonds, baking powder and salt.
- Add orange juice and peel to the oil and sugar and mix well, then add all this to the dry ingredients. If we used whole orange juice, we may need to add a little more flour so that the mixture is not too thin. We mix everything with a food processor.
- We put a little oil on our hands and form small balls, which we will put in a baking tray with baking paper. Bake for 22-25 minutes. When we take them out of the oven, let them cool a bit in the pan and only then take them out.
