Preparation steps
- Stir in the eggs with a whisk so that all traces of egg whites disappear. Add salt and pepper.
- Melt the butter with the oil at a moderate temperature. Wait with the eggs pouring in until the butter has completely melted and the pan has become hot.
- Pour the eggs into the pan. For the first twenty seconds, stir the eggs with a wooden spoon, as we would do when preparing scrambled eggs.
- When the eggs start to thicken, or start to change from liquid to solid, make sure that the eggs cover the entire bottom of the pan.
- Add grated cheese, or any other type of topping, evenly over the entire surface of the omelette.
- Using a wooden spoon, loosen the edge of half of the omelette and transfer it over the rest. Transfer the omelette semicircle to a plate and serve warm.
