Omelet with parsley (Maydanoz Omelet)

There is no official breakfast, lunch or dinner in our house ... we eat when we are hungry. My husband in the morning, while making me coffee and tea for himself, eats something "off his feet" then drinks tea and I drink coffee and then everyone goes and does what he wants, walks, watering flowers or whatever (since we haven't both done it for a long time) then we eat something around 10-11 o'clock we drink coffee around 2 in the afternoon and have lunch, ie we have dinner around 3-4 and later we eat some fruit and in between meals we eat fruit and drink smoothies, to cool down.

Preparation steps

  • Beat eggs with a wire, add primrose, salt and pepper. (I added a very small finely chopped hot pepper)
  • Pour oil into a Teflon or ceramic pan (1 tablespoon was enough for me) and heat, pour scrambled eggs, cover to fry evenly on top and fry until fried (you don't have to keep it covered all the time, cover only at the end of frying) and do not blush on the underside.
  • Serve warm with feta cheese, tomato, ajvar and kefir. I eat without bread, my husband with bread, you as you wish.
