Old salami in a new guise
since I don't eat white flour and sugar, making it takes a little more time because I had to make the biscuits myself, but I believe it pays off ... I can't say it's nicer, but I think it's quite close to the original salami, and certainly far health :)
Preparation steps
- It is necessary to make a biscuit first, and we can do that a few days earlier. Mix flour with baking powder. Add walnuts, honey, oil, on top of a pinch of salt. Knead the dough and, if necessary, add a little water. I put about 10g. Sprinkle it with flour and thin it with a rolling pin between two baking sheets. When we have parted it, chop it with a kitchen towel. It is not necessary to take special care of the shape because it will be chopped anyway, it is only important that it be of similar dimensions and thickness in order to bake evenly. Bake at 180 degrees for about 12 minutes, or until slightly browned. When it cools, cut it into small cubes.
- On a low heat (turn on the stove, then turn it off after a short time), melt the cocoa butter in a sieve.
- During that time, grind the dates in a blender, when they have turned into a uniform mass, add coconut oil and continue mixing together with the dates.
- Add honey, walnuts, cocoa, coconut oil and dates to the sieve with melted cocoa butter. Mix well and equalize, then lightly add the biscuits. I put on about 75 grams. Mix and equalize the mass. Transfer it to baking paper and shape into a salami. Allow to cool well. When the salami is firm, fix the shape a little more and roll it well in coconut flour.
- Cut into slices and enjoy. Pleasant! :)
