Old Macedonian recipes- Old gurabii
An old recipe, traditional for the town of Kavadarci and somewhere further east.
Preparation steps
- Put sour water, plain water, oil and sugar in a large skillet, just to boil and remove from the stove. Add the semolina and mix with a wooden spoon until the mass is evenly balanced, you should mix a little harder so that there are no lumps.
- To cool down a bit, take the mixture in a bag to form gurabi, put them in an unfermented tray, next to each other but with a space, cut each 2 times with a knife.
- Bake at 220-250 for about 40-50 minutes, they should stay white.
- While they are baking, prepare the sherbet, but only to melt the sugar and boil it a little. Set aside to cool.
- Pour the hot pigeons with the sherbet, return to the preheated oven for another 2-3 minutes, take them out to cool and soak up the sherbet.
