Old bread croquettes and scrambled eggs
If you have old bread and some scrambled egg, here's an idea how to use them ...
Preparation steps
- Cut the bread into small cubes.
- Mix one egg, milk, spice C with a fork, then pour over the chopped bread with this mixture. Leave it to stand for about 15 minutes, stirring occasionally, so that the bread absorbs the mixture nicely.
- Knead the stale bread well with your hands.
- Separately fry the finely chopped onion in oil, add the finely chopped ham, ground pepper, and when everything is nicely fried, add 4 scrambled eggs with a fork, then make a soft scrambled egg, so that it is a little alive, meaning that it is not completely fried, and serve this mass immediately into the bread and knead well. If you happen to have added a little more milk, add a little pretzels.
- Add the chopped parsley leaf.
- From this mass you make balls with wet hands, I prefer to make them as small packaged ones, because they fry better, roll them lightly in pretzels, fix their shape a little more, don't put too many pretzels, because they fall off when frying and then just burns in oil ... just enough to stick right away.
- Fry them in oil, as soon as they are slightly browned, they are done.
- These croquettes are nice and hot and cold, and go with all salads, mayonnaise or sour cream.
