Oifacha Treibles-Kucha or a simple currant cake
I never thought I would enjoy currants. But as life led me to a wonderful swabland, there was no choice but to try. Love at first bite;) Be sure to try it!
Preparation steps
- Knead the dough from all the ingredients and wrap in foil, then leave in the fridge while you prepare the rest.
- Mix the egg whites with a pinch of salt and add the sugar three times. Stir until you get a solid, shiny snow. Like for pussies.
- Take the dough out of the fridge and roll it out to the size of a mold (mine was 24, but maybe 26cm). Line the bottom of the mold with baking paper, and grease the sides with butter and flour. You can best roll the dough between two foils, so don't use flour and it's much easier. Roll the dough along the edge of the mold at least about 2 cm. Place in a preheated oven at 180 degrees for about 10 mins.
- While the dough is in the oven, mix the ground almonds into the egg whites (leave about two large full spoons to sprinkle the dough) and currants. Do not mix with a mixer but mix with a food processor. You won’t drop the “egg white” if you’ve mixed it firmly enough.
- Remove the dough from the oven, sprinkle with almonds and spread the egg white mixture, then flatten.
- Bake on hot air at 150, and on top and bottom heater at 170 degrees for a minimum of 45 minutes. Even up to an hour. You can freely cover it with foil towards the end if you think it will burn from above. That's why I prefer to bake it in hot air, because then I don't have to cover it. When done, leave p
- When it is baked, leave it in the oven off for another 15 minutes. Then remove and cool well.
