Octopus the Hvar way
Pleasure for gourmets! An excellent combination of aromas, flavors, Mediterranean spices and a barely noticeable aroma of white wine. Mmmm, do you smell the annual in the air?
Preparation steps
- Clean the octopus. If you use fresh octopus, it is advisable to freeze the cleaned one before use, because it cooks faster and becomes softer.
- Place the octopus in a suitable pan on cold oil. Arrange the potatoes cut in halves and the onions cut into quarters on the side.
- Sprinkle everything with rosemary and Vegeta. Add a little salt to the potatoes. Cover well with aluminum foil and bake without watering in an oven preheated to 180 ° C for about 1 hour.
- Towards the end of baking, pour wine over everything, add chopped garlic and bake briefly without foil.
Serving
Cut the octopus into pieces and arrange together with the potatoes and roasting juice on a heated plate, and sprinkle with chopped parsley.
Advice
The foil you use to cover the pan must be firmly glued to the edges to keep the dish juicy.
