Oatmeal and pineapple cake with putty
Delicious and healthy cake without sugar and flour, and rich in fiber. It is a cake that easily adapts to your own taste. Here is a version with pineapple, banana and cranberries. :)
Preparation steps
- Mix oatmeal (chopped), apples, egg, yogurt, baking powder, stevia, carob and cinnamon into a uniform mixture. If you can afford it, I know how to put 10 dkg of melted butter, but it has been proven to work without it. Finally, stir in the dried cranberries or raisins.
- Put the mixture in a greased and floured mold (I use butter and wholemeal flour, or maybe just baking paper) and flatten it.
- Bake at 180 degrees for about 20 minutes until the mixture sticks to the fork and until it gets a nice golden color. Allow to cool.
- While the mixture is cooling, clean the pineapple and blend it with the addition of water so that the whole mixture has 700- 750 ml. Depending on the sweetness of the pineapple, a little stevia can be added.
- Cook the pudding in a pineapple mixture. Allow to cool slightly. It turns gelatinous. Sometimes I can add finely chopped hazelnuts here - in the end it turns out like a crunchy pudding.
- Slice the banana into slices and arrange on the cake. Pour over the pudding and leave to cool and harden. It can last up to 4-5 days in the fridge, although it has never lasted that long for me;)
