Preparation steps

  • Mix flour, powdered sugar, vanilla sugar, grated orange peel and a pinch of salt. Add the whipped egg yolks with the margarine and knead a smooth dough. Leave to stand for 30 minutes in a cool place.
  • Roll out the dough to a thickness of 2 mm, then use a mold or a glass to take out circles with a diameter of 5 cm. Remove circles 2.5 cm in diameter from the middle of each circle with a small mold. Mix the rest of the dough and repeat the process of removing the circles. Arrange the obtained rings in a tray lined with greaseproof paper and bake in an oven preheated to 220 ° C for about 10 minutes.
  • Add eurocream and grated orange peel to the softened margarine and beat the cream with a mixer until foamy. Pour into a syringe and fill half of the rolls. Sprinkle with chopped hazelnuts on top, put the other half of the rings, press lightly and put in the freezer to stand for 15 minutes.
  • Melt the chocolate with a little oil and dip each roll in the glaze, place on a wire rack to drain, sprinkle with chopped hazelnuts and leave in the cold to harden the glaze.
