Noodles with shrimp, leeks and zucchini
Shrimp and noodles are the basis for a whole range of recipe variations. Here's one dear to me.
Preparation steps
- Fry finely chopped young garlic and leeks in olive oil, then add coarsely grated (along with the peel) zucchini and finally add the shrimp. Simmer until most of the liquid released by the shrimp has evaporated. Pepper and salt if necessary. Meanwhile, cook the noodles or some other fresh pasta. Transfer the dough directly from the pot in which it was cooked to the saucepan with a fork or a slotted spoon. Stir lightly and sprinkle with parsley.
Serving
When serving, sprinkle with coarsely grated goat cheese (if you like it). Serve with lettuce and some light white wine.
