Na’an
Bread from the Middle East and India, equally popular in the rest of the world :) Baked in a wood-fired bread oven is irreplaceable!
Preparation steps
- Stir the yeast in 100 ml of warm water and 1 tablespoon of sugar to rise for about 10 minutes.
- In a large bowl, mix the flour with salt, add yogurt and melted butter, and grind by hand until you get crumbs, add the yeast and cook the medium-hard dough with lukewarm water, transfer to a floured plate and make at least 15 minutes, coat with flour and let yeast about an hour.
- DO NOT mix the dough in any way, but slowly transfer it to a floured tablecloth, tear off hand-sized balls and, with the help of flour and rolling pin, spread them into pancakes, let them soak for at least 10 minutes.
- bake in a bread oven until they get fine brown spots, maybe an electric oven but the taste is nowhere near as original.
- Tip more They are very similar to Middle Eastern pies, so they can be served with falafel but also with everything else, primarily chicken and vegetables :)
