My grandmother's cake - Mika's cake
This cake really doesn't have a name, and we all call it that, the old, home-made, real cake that has been made for generations and that is always irreplaceable. At celebrations, you always have people who will say I prefer a fruit cake or a cake with walnuts, hazelnuts or a creamy one, and this is a cake that everyone loves!
Preparation steps
- Bark - Separate the egg whites from the egg yolks. Whisk 12 egg whites with 12 teaspoons of sugar into a solid. Add 12 egg yolks and stir a little more with a mixer at a lower temperature. In a bowl, weigh 200 g of walnuts on the side and mix with 100 g of flour and 1 full teaspoon of baking powder. Lightly combine the dry ingredients and add them to the beaten eggs and combine. Grease the round mold with oil and flour and pour the mixture into the mold. Bake in a preheated oven at 200C. I baked for about half an hour, but I always check these crusts with a toothpick. Remove the baked crust from the oven and leave to cool. When it cools down, cut the crust into 3 parts with a long kitchen knife or thread, how much easier it is for you and how you are used to cutting biscuits like this.
- Filling - Sprinkle 200 g of sugar with water, then add 1 margarine, 500 g of walnuts and 100 g of chocolate and boil a little more to thicken the filling. Allow the filling to cool.
- Fill the crusts and leave a little filling to coat the whole cake. Sprinkle the finished cake with ground walnuts. Leave in the fridge to cool!
