Preparation steps
- Turn on the oven to heat to 180C. Line the bottom of the mold with movable edges (22 cm in diameter) with baking paper. Finely grind the biscuits with a rolling pin or in a multipractice, then mix them with melted butter. Spread this mass on the bottom of the mold. Put in a preheated oven and bake for 8 minutes, then take it out and leave it to cool ...
- Prepare two sickles that fit together because of the steam heating. Pour milk into a small sieve, then sprinkle gelatin on its surface and leave it to swell for about 10 minutes.
- Pour water into a large skillet and set to heat. Place a small milk jug over the boiling water. Add 50 g of sugar, broken chocolate and egg yolks to the milk. Mix with a whisk until the chocolate melts and everything is combined into a smooth mass (about 10 minutes, maybe less). Remove from hot water and allow to cool to room temperature with occasional stirring.
- Whip the sweet sour cream, but not into a completely firm icing. Make it a little soft.
- Whisk the egg whites in solid snow with a little salt. Add the rest of the sugar to the already beaten egg whites and mix a little more.
- Carefully add the egg whites to the chocolate mass, stirring with a spoon from the bottom up. When combined, lightly add the sweet sour cream and mix everything with a spoon to even the mass. Pour on the prepared base and put in the fridge to harden for 4-5 hours.
- Decorate with chocolate crumbs or as desired ...
