Muffins with tomato juice

I like to experiment in the kitchen and I often do that, but it often happened to me that my daughter asked me to do something I was already doing, and of course I have no idea because I was working on current inspiration .... so now I write everything down

Preparation steps

  • Turn the oven to 200C. Beat eggs with ketchup, sugar, oil.
  • Mix both types of flour with baking powder and slowly mix into the egg mixture.
  • With constant stirring, add tomato juice..if you do not have juice, you can dilute the mashed tomatoes a little with a spoon, two waters..and finally mix in the grated cheese.
  • Line muffin tins with paper baskets and divide the mixture (about 2 full tablespoons of the mixture in each)
  • Bake at 180 C for about 30-35 minutes. Cool a bit and separate from the paper ... If you like more spicy, you can add chili, oregano or more spices as desired.
  • Serve with yogurt, some cheese spread or snack alone.
