Muffins with cranberries and dried apricots
The ideal composition of sour cranberries and sweet dried apricots give these muffins a wonderful taste.
Preparation steps
- Put flour, sugar and baking powder in a larger bowl and mix everything. Chop cranberries, chopped walnuts and dried apricots into small pieces and add them to the flour mixture and mix them to cover the fruit with flour.
- In a separate bowl, whisk the egg, add a tablespoon of milk, lemon zest and a tablespoon of butter (I used lemon zest oil), add this mixture to the flour and mix until you get a wet mixture, being careful not to mix too much.
- Preheat the oven to 180 ° C. Cover the muffin tin with 6 baskets and pour a well-full spoonful of the mixture into each basket. Sprinkle with almond leaves. Bake for about 25 minutes or try with a toothpick if it is baked, if the toothpick is dry, then it is baked.

The original recipe was made in the form of a small loaf baked in a 12.5cm X 7.5cm X 5cm mold. I liked them much more in the form of muffins and so I dried them much less. If you want 12 muffins, double the mixture.
