Muffins soft as foam
Preparation is completely different. You will see in the recipe why. The secret is in the method of preparation, temperature and length of baking.
Preparation steps
- Boil short milk mixed with powdered sugar and butter (to boiling point). Cool the mixture to 37 degrees (at the touch of a finger), whisk the yeast into the mixture. Add flour and salt. Knead a smooth dough.
- From the dough, immediately form 20 noodles. Thinly spread each noodle and wrap in a bun. Arrange the muffins in a baking tray covered with baking paper. Cover the pan with a kitchen towel and let it stand for 1 hour at room temperature. Meanwhile, preheat the oven to 250 degrees.
- Before baking, coat each bun with beaten egg to which you have added a little salt. Bake for 8-10 minutes in a preheated oven at 250 degrees. Coat the baked rolls with melted butter or margarine (30 - 40 g).
