Mining rake
Have you heard of Rude? It is a small place near Samobor with a long tradition. They were miners, they worked hard in the mines, sometimes they didn't eat anything all day except a piece of this thin gibanica, in their place, it's called a mining rake, it's best prepared there and that's where I got the recipe, above all simple. It pays off, try it.
Preparation steps
- Lift the yeast with a little milk, a teaspoon of sugar and a little flour.
- Mix the yeast with the other dough ingredients and let it rise.
- Meanwhile, mix all the ingredients for the filling.
- Knead the dough and roll it out to twice the size of the baking sheet
- Transfer to a baking sheet
- Spread the filling over the dough
- Fold and prick with a fork
- Spread the cream that you have whipped on top
- Bake at 200 ° C for about 20 minutes. This is what it looks like when baked
Serving
In Rude, rake is traditionally served hot with homemade Portuguese wine, and if you don't have Portuguese wine, any other red, but also white wine is good. The filling can be made in two more versions: 1. version - with cheese and walnuts (30 dag walnuts + 30 dag fresh cow's cheese)
