Mette is a top Danish pastry chef who has the same recipes. This is one of those, which is very simple and a real pleasure to taste. The cake is so fragrant, brittle and at the same time soluble in contact with the palate. I made them twice in a week and they disappeared quickly. I shared them with my daughter, with the neighbors I went to for coffee with, and with the family who were at dinner.
Preparation steps
- Cut the vanilla bean in the middle with a knife blade. Scrape the pod seeds with the blunt side of a knife. Put some powdered sugar on the board and rub the seeds into the sugar with a wide knife to separate the seeds. Sift flour and powdered sugar, add other ingredients and knead the dough, which you divide into two parts. Form the dough into two rolls / sausages with a diameter of 4 - 5 cm. Wrap in cling film and refrigerate for at least 1 hour. Cut the cooled dough to 0.5 cm with a sharp knife and arrange it on two large baking trays covered with baking paper. Leave a little more space between the cookies as they increase during baking.
- Bake in a preheated oven at 180 * C, about 12 - 15 minutes until they get a slightly yellow color. When you take them out of the oven, they will be soft, so leave them on the baking sheet for 2-3 minutes and then arrange them on the grill to cool. Store in a tin box if they reach it at all. With us, they ate quickly, and the rules themselves 2 times in one week.
