Mediterranean risotto
Prepare a fine risotto with shrimp tails and enjoy a dish that you can serve both cold and hot.
Preparation steps
- Sprinkle the cleaned shrimp tails (or shrimp) with Natur Mediteran and stir. Fry the shrimp in heated olive oil and when they are done add the finely chopped capers and garlic.
- Simmer briefly and cover with white wine. When the liquid is reduced add the rice.
- Heat with stirring and when the rice is glazed, cover with warm water, add Natur Mediteran and continue to simmer over low heat.
- Drizzle with water from time to time during cooking, and towards the end of cooking, add sliced zucchini to thin noodles.
- When the dish is done, stir in the cooking cream to make the risotto even creamier.
Advice
Arborio rice releases a lot of starch during cooking which gives density to your dish. So don’t overdo it with the cooking cream so that its fat doesn’t take over the flavor in this dish.
