Mayor's cake with chocolate and raspberries (by Rudolph van Veen)
I was delighted with the combination of chocolate and raspberries, I hope you will like it too :)
Preparation steps
- Preheat oven to 190 degrees. Melt the chocolate over low heat or in the microwave. Remove from heat. During this time, whisk the egg whites with a pinch of salt, when they become hard, add sugar and stir a little more to get a solid snow. Add butter and egg yolks to the chocolate, mix well and add one tablespoon of beaten egg whites. Mix well again and then return everything to the egg whites and mix well but lightly again. Pour into a pastry bag (I used plain). Make circles on baking paper. Rudolf made 12 big pieces, and I made 11 pieces from half the mass. Bake for about 12 minutes. (I am 11). Allow to cool.
- For chocolate and raspberry cream: Propagate the raspberries. The mass is already thick enough that it does not need any cooking, we just need to bring it to a boil. When it boils, remove from the heat and add butter and chocolate. Stir until dissolved. Whip the sweet sour cream and set it aside / in a fizider. Add a pinch of salt to the egg whites. Beat with one teaspoon of sugar. Put the rest of the sugar on the fire together with the water and let it boil, then cook for 2 minutes. When the syrup is ready, slowly pour it into the beaten egg whites and continue to stir with a mixer. (this syrup should reach a temperature of 120 degrees, and in egg whites when added so hot it should destroy any unwanted guests - I didn't measure the temperature and I don't know if that's the case). Again the same procedure as for biscuits. Add a little whipped egg white to the raspberry puree, mix well, and then pour everything together into the egg whites. Stir well but lightly, then add the whipped sweet cream and mix well again. Pour again into the pastry / ordinary bag and carefully pour over the baked and cooled biscuits. Put in the freezer to freeze.
- For ganas, heat all the ingredients except the chocolate until boiling, then remove from the heat, add the chocolate and mix well until everything is melted and combined.
- Take out the frozen cakes and dip them upside down in the chocolate. If you want, you can sprinkle them with chocolate on top, like Rudolph, the mayor didn't come to me, so I didn't try to do that;) Keep it in the fridge until serving. Pleasant! :)
