Mascarpone Grapefruit Ginger Muffins
This recipe saved sour-bitter grapefruit from garbage! And really, from that awful fruit came out mild, tender, slightly sweet (NOT AT ALL sour or crunchy), friedly prepared muffins. We adore them !!!!!!!! Mascarpone replaces butter !!! :))))
Preparation steps
- Mix the sugar, salt and eggs with a mixer until it becomes a light, frothy mixture.
- Add mascarpone, grapefruit and ginger, and continue to stir with a mixer.
- Mix flour, baking powder and baking soda together in another bowl. Add to the main mixture.
- Pour the mixture into muffin tins (with baskets or grease) and bake in a preheated oven for 25 minutes at 180 degrees. Leave in the molds to cool, then remove.
