MARZIPAN mass - basic recipe
It used to be the privilege of kings only, and today it is available to everyone. If you like cakes and cookies with marzipan, and it is unavailable or expensive, then make it yourself and at the same time go cheaper.
Preparation steps
- Step 1 Put the almonds in a bowl of hot water and leave it for about 15 minutes. Peel it, wipe it with a dry cloth and let it dry overnight. It is important for marzipan that the almonds are completely dry when grinding, because they grind better. For the sugar solution, mix 50 g of sugar and 50 ml of water, bring the mass to a boil, and then cool it well. Prepare the ingredients of Figure1.
- Step 2 Grind almonds: Grind the prepared almonds 2 times in a walnut mill. Then mix it with powdered sugar slika2. Mix ground almonds and powdered sugar with a spoon, put the mixture in a blender or coffee grinder, let them grind for about 2-3 minutes, or until a fine powder is obtained.
- Step 3 Now transfer the obtained powder to a bowl, add the aroma and pour in a little solution3, start kneading by hand as a dough, adding the solution as needed.
- Step 4 Knead until you get a mass identical to marzipan slika4, if the mass is a little harder than it seems to you or it breaks down and crumbles, add a little more solution, and if it is softer and nice, add a little more powdered sugar. Therefore, the mass should be smooth, uniform and not sticky when mixing.

- If you do not want to leave the almonds to dry overnight, you can dry them in the oven at 50 * C, about 10 minutes, or leave them a little longer to bake, then make marzipan from roasted almonds (this is the darker loaf in the picture) .
- If you think that grinding almonds is easier with the help of a blender or a pureing machine, do not do it at all, because you will completely pass it and later the marzipan will start to release fat, which makes it impossible to mix and shape.
