Marinated bonito
I adore this fish and everything that can be made from it. As they are big, a lot of fish is usually left, so I marinate it like this so that it can stand in the fridge for at least another week.
Preparation steps
- Tear the bonito into large pieces and place in a glass jar.
- Heat the wine to boiling with balsamic vinegar, garlic, rosemary, capers and salt. Pour over the bonito, mix carefully. Let it soak.
- Pepper the fish and pour over the olive oil. You can store it in a jar for more than a week in the refrigerator, and it is also possible to pasteurize it and store it longer than winter. He doesn't survive with me that long.
