Mango crème brulée
Crème brulée is a version of Crème Caramel, in which the caramelized sugar is on the surface of the cream and not on the bottom. We bake it in molds, in a water bath in the oven, cool it, shake it out of the mold and enjoy it like in a good restaurant.
Preparation steps
- Whisk the egg yolks together with the honey and vanilla sugar.
- Cutthepeeled mango into cubes and mix in an electric mixer. Mix mango puree with corn starch.
- Mix the sweet cream and milk and bring to the boil, then gradually add the egg yolks, stirring constantly, with a mixer. Stir in the agar-agar, and finally add the prepared mango puree.
- Coat the oblong tin bowls with butter and pour the prepared mango cream into them.
- Put boiling water in a large pan and place the prepared cream molds on the pan.
- Bake in an oven preheated to 160-180 ° C for about 45 minutes.
Serving
Cool the cream in the molds, shake out of the mold and serve with fresh fruit and caramel sauce.
