Mandazi
Mandazi could also be called African donuts in our language. They are great with main dishes like bread, and we like to snack on them separately :)
Preparation steps
- Crush the cardamom in a mortar and mix with flour, salt, baking powder and powdered sugar to get a uniform mixture.
- In a bowl, beat the egg with two tablespoons of oil and add to the flour mixture. Gradually add warm water while kneading the dough with your hands. Knead until you get a smooth non-stick mixture, and add more flour as needed. Cover and leave in a warm place for 15 minutes.
- Roll out the dough to a thickness of 1 cm, and with the help of a mold or glass cut out circular shapes. Fry in heated oil for 4-5 minutes, turning occasionally, until golden brown. Take them out on kitchen paper to soak up the excess fat and serve.
- They are best for me when they are warm, but they can also be eaten cold :)
