Makarnalı Rulo Köfte by Cahide Sultan

A wonderful dish of rolled pasta in minced meat with yogurt or tomato sauce. You can eat it cold or hot. Enjoy!

Preparation steps

  • Note: It would be good to use less fatty meat for this dish. It would be best to ask the butcher to grind a lean piece of spatula or ham. Put minced meat in a bowl, add egg, bread crumbs, salt, pepper, cumin and finely grated garlic. Mix everything well. Break off a piece of meat and fry it in a dry pan to see if the saltiness and spiciness suits you. Cook the pasta in salted water. Drain and rinse with cold water. Spread the transparent foil / it is obligatory that you can roll it more easily, spread the meat on the foil, approximately 40x40cm, so that it is approximately a finger thick. Arrange the pasta as in the picture, let it be neatly and finely arranged. Grate the cheese over the pasta and sprinkle with finely chopped basil. Roll tightly with cling film. Squeeze the ends well. Refrigerate for about half an hour. Preheat the oven to 180C. Remove the meat from the foil, coat it with olive oil. Place the oven on the baking sheet on which you have placed the baking papair. Bake for about 35 minutes. until the meat acquires a fiu color.
  • Serve cold or warm with yogurt or domades sauce.
