I also watched the preparation on the Le Monde website and there the mold was coated with butter and sprinkled with flour. I do so, but I am not satisfied. I didn't dust the second round with flour. Maybe that mold had to be floured because it’s some old, metal one. I don’t have real molds, I used Tescoma shells. It's not that, but ... what's there is. It's over in the blink of an eye. Almost two rounds come out in the first mold, more precisely 48. More precisely, if it were a real mold, it would be as it is in the original., 24.

MADLENE - Madeleines of commerce

This is a recipe from "The Great Pellaprat", delicious and quick to make. I usually do a double portion, because this portion disappears in an hour - just on trial. It can be done in two ways, the first way you get 12 pieces, and the second 9-10 pieces. Also instead of vanilla I usually put a little lemon - a few drops and grated rind. Perfect with tea!
