MADLENE - Madeleines of commerce
This is a recipe from "The Great Pellaprat", delicious and quick to make. I usually do a double portion, because this portion disappears in an hour - just on trial. It can be done in two ways, the first way you get 12 pieces, and the second 9-10 pieces. Also instead of vanilla I usually put a little lemon - a few drops and grated rind. Perfect with tea!
Preparation steps
- WAY 1: Beat the eggs with the sugar until they foam, add the sifted flour, vanilla and melted lukewarm butter. Coat the molds in which we bake with butter and sprinkle with flour, put the mass in them and bake in a hot oven.
- METHOD 2: All ingredients are the same except that we add half a teaspoon of baking powder. Beat the butter and sugar for 5 minutes together, then add first one egg, after 5 minutes another egg, then the flour that we sifted together with the baking powder and vanilla, and bake the mass in molds in a hot oven. Madeleines prepared in this way have a fresher taste but are heavier and turn out to be about 9-10 pieces.
Serving
The oven should be preheated to 180 degrees and baked for 10-15 minutes.
