You can also add an egg substitute to this cake: in a coffee grinder, which you do not normally use for coffee, but only healthy beans, grind 2 teaspoons of flaxseed. Mix it with very little lukewarm water and you will get a slimy egg-like substance that "binds" the cookies well.
Preparation steps
- Projino flour is toasted like this before making the cake: spread it on a baking sheet and put it at 160 degrees in the oven to bake for about 20 minutes. Stir every 5 minutes to bake evenly. Allow to cool before use.
- Now the cake:
- Mix wheat and rye flour, hazelnuts, and baking powder. Add dried and fresh fruit and juice, then mix.
- Pour into a 12-piece muffin tin, garnish with plum halves and bake in a preheated oven for about 50 minutes at 180 degrees.
