Lingue di suocera / Mother-in-law's tongues with rosemary
Snacks that you can enjoy "natur", or with sauces, vegetables and cheeses ... of course in the company of mother-in-law;)
Preparation steps
- It is not necessary to use active yeast for this recipe, you are free to put unfed yeast if you have excess. If you do not have yeast, add 60 g of flour and 30 g of water plus 5 g of fresh yeast.
- Peel a squash, grate it and add to the bowl with water, stirring by hand until it melts. Add oil and flour, two to three pinches of salt, garlic powder and finely chopped rosemary leaves.
- Knead everything by hand until you get a smooth and soft dough. Round the dough into a ball, place on a floured work surface, cover it with an inverted bowl and let it rest for 1/2 hour.
- Divide the dough into pieces (determine the size as desired). Shape each piece into a roll, then roll it out thinly to a thickness of a few millimeters. Sprinkle them a little with a fork and place on a baking sheet sprinkled with a little sharp flour.
- Bake them in an oven preheated to 180 ° C on a ventilated one to dry better. Depending on the oven, about 25 minutes. If you do not have a ventilated oven, after you have turned off the oven, leave them inside for a few minutes with the oven door ajar so that steam can escape and dry well.
- P.S. if you don’t like rosemary or garlic, you can omit both, or you can replace them with spices or aromatic herbs as desired (it doesn’t have to be fresh, you can also use dry), or seeds. I added rosemary flowers to the leaves
Serving
Serve them as snacks (like crackers) or with spreads / dips as desired
