Lentils and integral rice salad (Yeşil Mercimek Salatası)
A complete meal, great for you, who do not eat meat or fast and can be a great side dish with fish.
Preparation steps
- The lens (I used a French green lens, you use the one you have) is cleaned and rinsed with cold water, put in a pan, poured with water to cover the lens and cooked until the lens softens (I don't like to overcook the lens, I like it al dente) When cooked, drain the water and set aside.
- Clean the rice, pour enough water to cover the rice and cook until the rice is cooked, al dente. Whole rice cooks longer than regular rice. Drain off excess water. Put the rice and lentils in a larger bowl.
- Peel an onion and cut it in half and then cut it into thin slices. I used shallots. Pour a little oil into a larger pan, add shallots and simmer at a low temperature for ten minutes, add coarsely grated carrots and sauté them just to soften them a bit (I didn't simmer onions or carrots, it's perfectly fine to eat them fresh in a salad, you, as you wish) add to the bowl with the lentils.
- Add finely chopped dill, mint, salt, pepper and lemon juice to the bowl, if you want, apple cider vinegar can be used instead of lemon juice, whichever you prefer. Mix everything and you can serve immediately or leave for half an hour at room temperature.
