Lentil burgers
Veggie meatballs or burgers, a very good alternative to meat.
Preparation steps
- Lentil types, nutritional value, properties and cooking length. Wash the lentils and put to boil in boiling salted water (or stock). Add one small onion cut in half, bay leaf and a few peppers in a grain, a little thyme. Cook until softened (orange is cooked quickly, while brown must be cooked a little longer) but do not overcook because overcooked lentils lose their flavor. Strain and cool. It's finest with a brown lens, but it can be different. The length of cooking and the color of the steaks also depend on the type of lentil. With me this time with orange. It swells less than brown, but is more floury.
- Toast the chopped pumpkin seeds and sesame seeds in a pan without oil. When fragrant add ground almonds or walnuts, hazelnuts. Just toast briefly. Pour into a bowl. Add a little oil to the pan and add the finely chopped onion to make it sticky, then add one chopped clove of garlic and sauté it briefly.
- In a lentil, add the sauteed onion and garlic, squeeze another small garlic, add all the ingredients, season well as desired and stir. If it is very humid, add another 1 tablespoon of fine barley flakes (or some others if you prefer) and / or a tablespoon, two bread crumbs.
- Leave the mass to stand for about half an hour, it will still shrink a lot. Shape 8-10 balls with your hands first, press them between your palms on which you put a little crumb to make it easier to form a steak (burger) it will be like steaks to you. I toast them without breading in a pan, in a little oil, so I make veggie burgers with them. I think they would be delicious from the oven too.
- Serve them in hamburger buns with the addition of salad, cucumbers, onions and tomatoes (summer) or lettuce, onions, pickles and cheese leaves (winter) or fill them as you like. You can use only ketchup or a mixture of ketchup and mayonnaise for the sauce (this sauce is finer for us). You can also use lentil burgers as a standalone dish with garlic sauce (sour cream, a couple of tablespoons of mayonnaise, a little garlic, salt, pepper, chopped parsley)
