Lemon- Speculoos cake

I finally found a mold size of 18 cm, so here it is ... the christening of a new mold .... and a cake stand :)

Preparation steps

  • First make a speculoos cream. Preheat the speculoos biscuits in the oven for 10 minutes at 150 degrees. Grind them into a powder and place in a bowl with the chopped white chocolate.
  • Heat the milk along with the honey and sugar, and when it boils pour over the biscuits and chocolate. Stir to melt the chocolate and add the oil. Pour into sterilized jars and allow to cool.
  • For the cake, prepare a mold with a diameter of 18 cm. Preheat the oven to 180 degrees. Sift flour, baking powder and salt and set aside.
  • Whisk in room temperature butter, sugar and lemon zest. Add one egg at a time, then sifted flour, milk and lemon juice. Bake for 35 minutes.
  • For the cream 3 min. mix the butter, add the speculoos cream, then the sugar and mix everything well. Finally add the cream cheese.
  • Cut the dough in half, put 1 coat of cream in between, and coat the whole cake with the rest of the cream. Garnish with grated chocolate or speculoos biscuits.

  • Note: * in the speculoos cream I reduced the sugar to 15 g because the white chocolate is very sweet, I put 3 tablespoons of maple syrup. The cream is sweet enough. * I reduced the sugar a lot in the biscuit, I put 3 tablespoons of sugar.
