Lela's charlotte with strawberries and white chocolate
I remember that this recipe was given by the famous actress Lela Margitić (unsurpassed in R.Queneau's Stylistic Exercises), and I have been preparing to try it for a long time. It was forgotten for about 15 years in my notebook, and as I got strawberries the other day and found that they weighed just 1/2 kg, the decision fell on this light charlotte. Creamy to the sky.
Preparation steps
- Wash the strawberries and leave them to drain.
- Put gelatin in cold water to swell.
- Boil the milk.
- Beat the egg yolks with 8 dag of sugar until light. Lightly pour in the hot milk and stir constantly. Pour the mixture into another bowl and cook over low heat, stirring constantly, until it becomes thick. Add the drained gelatin and stir until it melts. Put the cream to cool.
- Whip the whipped cream with 2 dag of sugar and add it to the completely cold cream. Stir gently with a whisk or a blender.
- Cut the drained strawberries into quarters and sprinkle them with the rest of the sugar.
- Coat the bottom and edges of the cake tin with biscuits, which you will shorten if necessary.
- Cover the bottom with cream at a height of 2 cm and cover with a portion of strawberries. Stack the cream and strawberries until you have the groceries, then cover with the biscuits. Refrigerate for at least 4 hours.
- For the glaze, melt the chocolate with the oil over a very low heat, stirring constantly.
- Turn Charlotte over on a cake plate and remove the ring and bottom of the mold. Pour over the glaze and decorate as desired
