Lchf munchmallow
And finally it was the turn of munchmallow in the lchf version :) I have been planning to make it for a long time, but I always spend erythritol on some other treats, so this time, as soon as it arrived, I made this cake. Super substitute for a regular munchmallow cake, without sugar and with very few carbohydrates :)
Preparation steps
- Mix egg yolks with cheese, stevia and cocoa powder, add soda and bake the crust on baking paper, at 180 degrees for about 15 minutes.
- During this time prepare the shaum. Mix the egg whites with a little salt, and when the snow is made, add spoon by spoon of erythritol, mixing all the time. Finally sweeten with stevia to the desired sweetness. Prepare the gelatin according to the instructions and mix it into the egg whites, mixing all the time. Put the filling over the crust.
- Melt the chocolate in a steamer with oil and pour over the hot cake. Cut into cubes immediately.
Serving
* Erythritol is a sugar alcohol, it looks like crystal sugar, and I grind it in an electric coffee grinder, because it would be felt in the noise, it would crackle: D Otherwise, it does not contain calories or raises insulin, so it is suitable for lchf diet. It's not as sweet as sugar, that's why the sweetness is "adjusted" with stevia :)
