Lasagnetti by Jamie
My daughter's New Year's gift to me was Jamie Oliver's book - 30-minute meals. She herself was undecided on the choice, whether this or that - 15-minute meals ... she knows that I am always pressed for time. This recipe is from the other one, a variant of which we found on the internet in the English version. Along with this pasta, Jamie also prepared lamb ribs, which I didn't even have, and I would hardly have gotten if I wanted to. Lamb meat in our country usually goes "whole" or "half". So this recipe turned out to be a vegetarian meal. I hope Jamie won't sue me for copyright ;-)
Preparation steps
- I prepared the dough myself, from eggs and flour and adding a little water as needed. It should be left to rest for half an hour before stretching.
- Roll it out to the thickness of lasagna dough and cut strips 2 cm wide. I rolled mine on the machine to number 6 out of a total of 9. The dough prepared in this way needs 2-3 minutes to be cooked.
- Of course, you can also use fresh pasta for lasagna. Dry is not recommended because it needs more time for cooking and it is difficult to cut properly.
- When the pasta is prepared this dish is really done in 15 min. Maybe even before. Chop all the vegetables, spring onions into rings, asparagus as well, but leave them with longer tops. Cut the tomato into quarters or halves if it is small, the mint finely, and the chilli also into small pieces. Heat the water to boiling.
- Heat the oil in a wide pan and add the onion, asparagus, tomato, mint and paprika. and then crushed garlic along with the peel. Simmer lightly for a while, then add the prepared pasta and pour hot water over it. Cook for 2-3 minutes, stirring to combine everything and cook the pasta. Sprinkle with parmesan, stir and remove from heat. Jamie says that Italians don't do this and I believe him, but this is a really good way to cook a dish in the same dish in which you will serve it without excess dishes :-)

Serving
Serve immediately in the same dish in which the food was prepared. Drizzle with a glass of white wine or as you wish.
