Lamb handkerchief
I am someone who does not strictly follow the recipe, so I adapt this one to my family and myself. My husband doesn’t like liver, so I used two blends.
Preparation steps
- Finely chop the lamb, and then the liver. Cut into small cubes (as for pie) potatoes, as well as peppers and onions.
- Put half of the mixture of peppers, potatoes and onions in the meat, and half in the liver.
- Mix everything and season as desired. I used salt, pepper and ginger.
- Float the handkerchief. Put one mixture on one half and the other on the other.
- Wrap it nicely in a ball and put it in the oven without prior lubrication because the handkerchief releases enough of its fat.
- Bake covered at 250 ° C for about an hour and a half
