Lahmacun - "Turkish Pizza"

There are already recipes for this delicious Turkish delicacy on Coolka. Mine, however, differs in ingredients and in the method of preparation ...

Preparation steps

  • Cut red onion and garlic into small cubes and fry in a little oil. Add the meat and fry it until it is completely crushed. Add tomato sauce and spices, simmer for a few minutes. The mixture is ready when the liquid evaporates a little and everything is still moist enough. Set aside to cool slightly.
  • Knead the dough from flour, yeast, salt, cheese, oil and water. Gradually add water so that the finished dough is soft, but separates slightly from the bowl. Leave it in the heat for about half an hour to rise a bit.
  • In the meantime, make a “baking tray”. Why? Because in this way lahmacun gets the consistency it has when made e.g. in a bread oven :) My Turkish neighbors have a special grill for lahmacun, but the same result is achieved when the dough is baked on the oven floor heated to 250 ° C on aluminum foil and baking paper. Means: make of aluminum foil "tray" in the width of the oven. Lahmacun is baked max. five minutes and in this way gets a lot of heat from below, so that in the end it is crispy and tasty.
  • Divide this amount of dough into approx. 15 balls and with the help of a rolling pin and hand stretch so that two lahmacuna can stand on the foil. Apply the filling evenly and place in a well-heated oven. Remove after 5 minutes.
  • Along with lahmacun, fresh salad, tomatoes, red onions are served and everything is drizzled with lemon juice. Who likes and tolerates slices of fresh hot peppers ... so choose vegetables that suit you.

Serving

Serve with liquid yogurt or kefir.
