Kurtoskalacs (Chimney cake, chimney)
Last year when visiting Pécs I tried this cake, it was love at first sight! :-) After researching online and bothering my husband to make me a basic "tool", I embarked on a sweet adventure and preparing Kurtos in a home performance, and the result exceeded all our expectations.
Preparation steps
- First, I had a carpenter make two wooden rollers with holes at the ends through which the holders should go if the cake was to be rotated on the grill, just like in the original way of making it.
- Then I coated the roller with aluminum foil (not necessary but the dough is easier to remove after baking). I pushed a toothpick into the holes on each side of the roller so that they could be held on the sides above the baking tray. on the underside and I was not satisfied.
- MAKING THE DOUGH: I made the dough according to the classic recipe: I mixed the yeast with sugar, milk and flour and left it to rise for 5 minutes in the heat. After that I mixed the flour with the yeast and other ingredients and made a smooth dough and left it warm in the oven to "rises" for about 20 minutes. I found the recipe for the dough on the Internet looking for an original recipe for smaller quantities.
- When the dough doubled the wooden rollers (i.e. aluminum foil) I coated with butter and rolled the dough in the shape of an oblong worm by rotating the roller and winding the worm around the roller. I got the worm by mixing the dough once, rolling it out in a circle 0.5-1 cm thick and cutting an oblong strip into a circle with a knife. got a uniform dough.
- After the dough is rolled on a rolling pin and rolled, the dough is coated with melted butter and sprinkled with sugar, which will later caramelize during baking.
- I preheated the oven to 180 degrees, and put it on the top heater + ventilation, so that after a few minutes it immediately started to caramelize on the top, I turned it two more times until it turned slightly red on each side. I tried to put it on the standard yes it heats me equally from top to bottom, but again it only turned red on the top and it took a lot longer to turn and bake.
- After baking, remove the Kurtos from the roller and roll them hot into the mixture of your choice (vanilla, cinnamon, walnuts, hazelnuts, chocolate). I rolled them in a combination of cinnamon, vanilla sugar and powdered sugar.
