Kumanovo village meat
Rural meat is prepared in several ways, with more or less types of meat and vegetables, each rural meat is delicious in its own way. A few days ago I watched on TV how in a renowned hotel they prepare Kumanovo rural meat as a Macedonian traditional dish. I liked it recipe, so I decided to celebrate the wedding anniversary with this dish with friends in the village. According to the recipe, they prepared the dish by frying it in a sickle on a hot plate, and after frying we baked the dish a little in the oven.
Preparation steps
- Put chopped leeks in a bowl with a little oil to fry, add chopped dried peppers and fry a little more, add diced meat and fry until the meat turns white for about 15 minutes, add bacon and fry, stirring constantly, for another 10 minutes, pour white wine and leave to simmer for about 30 min.
- In another pan on the fire put the oil and a little butter, add the sliced champignons and fry until the water they release evaporates and then add the dried tomatoes that we previously put to stand in the oil or get dried tomatoes in the oil.
- Add the fried champignons and tomatoes to the meat dish and stir to combine the ingredients. Add the dry spice-vegeta, black pepper and finely chopped parsley. Simmer for a while longer and that's it.
- For my taste, the meat is softer and tastier when it is slightly browned, so I added a glass of water, transferred the dish to the pan and put it in the oven to bake for about 30 minutes at 180c.
- served with boiled potatoes
