Kozinjak (salt braid)
Kozinjak or braid is usually made sweet during Christmas or Easter. This time a nice, soft and delicious salty braid with three types of filling that looks decorative .... :))
Preparation steps
- First, prepare the fillings: Put the cleaned spinach in a pot with boiling water and boil it. Strain the boiled spinach, finely chop it, add salt, pepper and fry in heated oil.
- In another frying pan, fry the minced meat with salt and pepper in oil and when it is done, set it aside.
- Crumble the hard cheese into small pieces and set it aside.
- Put yogurt in a pot to cool. In another bowl put 100 ml of lukewarm water, add 1 teaspoon of sugar, a little salt and yeast and mix with a wire.
- In a deep bowl, put 1 kg of flour, a teaspoon of sugar, a teaspoon of salt, yeast, yogurt and mix with a spoon. Put four eggs in the dough and mix everything well by hand, then transfer the dough to flour and add as much flour to get a smooth dough and mix it well. We form a ball and leave it covered for 30 minutes in the heat.
- On a floured table, divide the dough into three parts and form balls.
- We make a crust from each ball with a rolling pin and rub 1/3 of the margarine or butter on the large side of the currants.
- Fold the crust 4 times and form an envelope. Repeat the same procedure once more and make an envelope again.
- From the other 2 balls of the test, we repeat the same procedure as with the first ball.
- From the first dough, roll out the crust again and cut it into three strips. Put 1/3 of all three different fillings on top of each strip.
- We repeat the same procedure with the other 2 balls and 1/3 of each different filling goes on each crust.
- we bend the ribbons into a roll.
- We take three rolls with different fillings and weave them into a braid (minced meat, cheese and spinach). Leave them to rise for another 30 minutes. at 180 C 45 min.
