KOŠINJA (Coxinha - Brazilian croquettes with chicken)

I had to do something Brazilian, because of the Olympics in Rio. Athletes say that their favorite dish is 'kosinja', which can be bought on the street on a stick, so I found a recipe on the internet. I see that there are already some on Kulinarica, but I liked this version the most, which is a little different from the recipes published so far.

Preparation steps

  • Pour 2.5 liters of water into a larger pot and add garlic and onion, primrose leaves, potatoes, salt and pepper. The soup is ready in 20 minutes. Take out the meat and potatoes, and strain the soup. Cut the meat into cubes and mash the potatoes.
  • Fry the onion and garlic in a medium pan and remove from the heat. Add all other ingredients and mix well.

Serving

In another medium bowl, heat the soup, add the mashed potatoes, flour and salt and pepper. Stir the mixture over high heat on low heat for a few minutes. Remove from the heat and allow the dough to cool.
